Protein-rich vegetable pulao
Ingredients to prepare protein rich vegetable pulao:
2 cups chopped mixed vegetables (carrots, cauliflower, peas and broccoli), ½ tsp black peppercorns, 1 medium diced onion, 2 black cardamoms, ½ cup sprouts, 1”cinnamon stick, ½ cup soya chunks-soaked and ready to cook, 1 tsp rd chili powder, 1 tsp cloves, salt to taste, 1 tbsp olive oil, 2 cups water
Method to prepare protein rich vegetable pulao:
Heat oil in pan over medium flame. Now sauté chopped onion sin it till they turn pink in color.
Now add whole spices to pan and stir fry them. Add vegetables except sprouts and soya chunks. Stir well and cook with ¼ cup water so that vegetables become tender.
Now add sprouts and soya and cook for 3 more minutes.
Add rained brown rice. Season with salt and chili powder. Mix well.
Add 2 cups of water and bring whole mixture to a good boil. After boil, simmer and cook after covering the pot with lid for 10 minutes.
Transfer the vegetable pulao to serving plate and serve hot with skimmed yogurt, salad or grilled fish as per your choice and preference.
