Apple and
pumpkin spice stew
Ingredients to prepare apple and pumpkin spice stew:
1 can vegetable broth, 1 diced onion, 1 can pumpkin puree, 1
chopped green bell pepper, 1 can’s worth of almond milk, 1 large
honey crisp (peeled and chopped), 1 can tomatoes (diced, drained
and rinsed), 1 can garbanzo beans (drained and rinsed), 1 can
pinto beans (drained and rinsed), salt and pepper to taste, ½
tsp ground cloves, basil for garnishing
Method to prepare apple and pumpkin spice stew:
Prepare fruits and veggies. Drain and rinse all your cans of
beans and tomatoes.
In cooker, pour vegetable broth with pumpkin puree and almond
milk. Stir nicely. Toss in everything else and mix nicely. Add
salt, pepper and cloves. Place cooker on high flame and let
veggies cook for 3-4 hours. Stir every hour.
Store in refrigerator in an air tight container.
Thai sweet potato
stew
Ingredients to prepare Thai sweet potato stew:
1 medium thinly sliced onion, 1 tbsp dried cilantro, ¾ cup
vegetable broth, 2 tsp canola oil, 2 tbsp coconut milk, 1 tbsp
low-sodium soy sauce, 1/3 cup pineapple juice, ¼ cup unsweetened
coconut flakes, 1 tbsp green curry paste, 1 large sweet potato
(peeled and sliced into ¼ inch half rounds
Method to prepare Thai sweet potato stew:
Heat oil in pan over medium heat. Sauté green curry paste in it.
Now add onions and stir fry them for 3 minutes.
Add sweet potatoes and stir-fry them for 15 seconds.
Now add broth and coconut milk to it. Bring it to a boil and
then cook on low flame for 10 minutes.
Now pour soya sauce in it with pineapple juice and coconut
flakes. Cook for five minutes.
Transfer stew to serving bowl and add cilantro to it. Serve
immediately.
