Best Healthy Carrot Kheer recipes

We all love eating kheer especially in those festive seasons of the year! Apart from your regular rice kheer, you can try something interesting by adding carrots to kheer and making it as a healthy, delicious and mouth-watering dessert. Carrots being highly rich in antioxidants and vitamin A make this delicious dessert highly tempting and nutritious. Carrots also helps in improving your eyesight and help in maintaining normal blood pressure. So don’t think much and include this recipe in your diet as it is set to boost lot of vitamins and other nutrients in your body. Read the recipe of preparing carrot kheer written below!

Ingredients to prepare carrot kheer recipe:
1 cup water, 1 cup milk, 1 finely grated carrot, ½ tsp ghee, few cashew nuts and cardamom for garnishing, 1 tbsp brown sugar and 1 tbsp honey

Method for preparing carrot kheer recipe:
In a pan, sauté carrots in ghee over low medium heat for few minutes.
Now add sugar and water to sautéed carrots to make them soft and tender.
After sometime, add milk to it and allow to mixture to boil for few minutes.
At the end, add chopped cashew nuts and cardamom and serve hot.

Kerala carrot kheer recipe

Ingredients to prepare Kerala carrot kheer recipe:
Few strands of saffron, 2 carrots, 2 cups milk, some cardamom, 1 tbsp cashews, 1 ½ cups sugar, 5 almonds

Method to prepare Kerala carrot kheer:
For 30 minutes, soak cashews and almonds in warm water. Later grind them to prepare a fine paste.

Pressure cook carrots in ½ cup of milk upto 3 whistles. Now grind carrots.
In a pan, cook ground carrots with ½ cup milk. Boil it for 10 minutes and then add sugar and almond-cashew paste to it. Bring the whole mixture to boil.
At the end add cardamom and saffron to it. Refrigerate.
Serve chilled.
