Best Healthy Capsicum Recipes

Capsicum is loaded with vitamins but low in fat content hence it is one of the healthiest veggie. Low calorie stuffed capsicum

Ingredients to prepare low calorie stuffed capsicum:

T1bps oil, 4 capsicums (preferably all colors), salt and chili powder to taste, ½ cup dalia, chopped nuts for garnishing, handful of boiled green peas, chopped coriander leaves, 1 cup tomato juice

Method to prepare low fat stuffed capsicum:

Cut capsicums into half pieces and remove unwanted seeds from it. Keep them aside.

Wash daliya nicely and then cook it in pan with ½ tbsp of oil. Add peas, chili powder, salt and tomato juice to daliya and cook on medium flame for some time.
At the end add coriander and mix nicely.
Now stuff mixture in capsicum halves and then place the stuffed capsicums into pan and steam fry them for 10 minutes on low flame.
Serve hot.

Capsicum poriyal

Ingredient to prepare capsicum poriyal:

Salt to taste, 5-6 curry leaves, 2 ½ cups chopped capsicum, 2 tbsp sour curd, ¼ tsp asafetida, 1 tbsp coconut oil or any other refined oil, 1 tsp cumin seeds, 1 tsp mustard seeds

Method to prepare capsicum poriyal:
In a bowl, mix sour curd and chopped capsicums and leave it aside for 15 minutes.
Heat oil in pan and sauté mustard seeds and cumin seeds in it. Now add asafetida and curry leaves to it. Stir continuously.
Now add capsicum mixture to it with 1 tbsp of water and salt. Mix nicely and cover with lid. Cook for 5 minutes and then serve hot.
