Ingredients to prepare methiche varan:
2 tsp grated jaggery, 1 tsp ghee, 1 cup arhar dal soaked for 20
minutes and drained, ½ tsp chili powder, ¼ tsp turmeric powder,
¼ tsp asafetida, salt to taste, 5 garlic cloves, 1 cup finely
chopped fenugreek leaves
Method to prepare methiche varan:
Pour dal in pressure cooker along with turmeric powder, salt and
3 cups of water. Pressure cook till dal is done.
In another pan, add ½ cup water to chili powder and jaggery. Mix
well and bring solution to a boil.
For tempering, heat ghee in pan. Sauté garlic and asafetida in
it on medium flame. Also add fenugreek leaves and sauté for 2
minutes. Now pour this tempering over boiling dal and mix well.

2 tsp oil, ¼ tsp chili powder, ½ tsp finely chopped green
chilies, ¼ tsp turmeric powder, 1 ½ tbsp powdered poppy seeds, 2
cups peeled and sliced ridged gourd, ½ cup finely sliced onions,

Method to prepare ridge gourd with
Prepare smooth paste by combining poppy seeds with 1 tbsp water
in bowl. Keep it aside.
Heat oil in pan and splutter mustard seeds in it. Now add red
chilies and saute them for few seconds on medium flame.
Add onions and stir fry them on medium flame for 4 minutes. Now
add turmeric powder, chili powder, ridge gourd, green chilies
and 2 tbsp of water. Mix well. Cook for 5 minutes.
Now add poppy seeds paste along with salt and 3 tbsp of water.
Mix well. Cook for 5 minutes.
