Ingredients to prepare baked poha:
1 tbsp chopped coriander leaves, 1 ½ cups poha, 1tsp sugar, 1
chopped green chili, 1 tsp sugar, 2 tsp lemon juice, 6 tbsp low
fat curd, 1 tbsp soaked fine semolina, pinch of asafetida, 2 tsp
oil, ½ tsp mustard seeds
Method to prepared baked poha:
Wash poha for 5 seconds in running water.
In a bowl, add lemon juice with coriander, curd, green chili,
semolina and sugar. Season with salt and mix well.
Grease the baking tray with few drops of oil and spread the
prepared mixture evenly on it.
For tempering, heat some oil and crackle mustard seeds in it
along with asafetida. Now sprinkle this tempering over poha.
Bake in oven at 200 degree C for 10-15 minutes.
Serve hot after garnishing with coriander leaves.
Masala cheese toast
Ingredients to prepare masala cheese
4 tsp grated cheese, 2 tbsp finely chopped onions, 4 slices
whole wheat bread, ½ cup finely chopped vegetables ( green peas,
capsicum, cabbage, French beans, cauliflower), ¼ cup boiled and
lightly mashed potatoes, salt as per paste, ½ tsp chili powder,
2 tsp oil, 1 tsp finely chopped green chilies, 2 pinches garam
masala, 2 tbsp chopped coriander
Method to prepare masala cheese toast:
In a non-stick pan, heat oil and sauté onions in it till they
turn translucent. Now add the rest of veggies to it along with
garam masala powder, chopped coriander, chili powder, green
chilies and potatoes. Cook for 2 minutes. Add salt.
Remove the pan from flame and allow the mixture to cool down.
Toast the bread slices till they are slightly crisp. Spread 2
tbsp of the prepared mixture on toast evenly. Top each bread
with grated cheese.
Now place the bread in oven and grill.
